AUSTRIAN FRIED DOUGH WITH VANILLA SAUCE
Sabrina from Sabrina kocht (Sabrina Cooks) loves to make Austrian fried dough with vanilla sauce – and not just during the carnival season. Topfenmäuse, which translates as „curd mice“, is an ideal dessert for those with a sweet tooth and for entertaining afternoon guests.
And this is how it's done
INGREDIENTS
Austrian fried dough
- 250 g flour
- 1 pkg. baking powder
- 250 g quark
- 3 eggs
- 4 tbsp sugar
- 1 pkg. vanilla sugar
- Raisins, rum
Vanilla sauce
- 1/2 l milk
- 20 g vanilla custard powder (= 1/2 pkg.)
- 1-2 squares of white chocolate
- Sugar or agave syrup
METHOD
Austrian fried dough
- Mix all the ingredients and knead into a dough.
- Use a spoon to form mice-shaped pieces and fry the „mice“ in sufficient oil or butter at a moderate temperature. Then remove from the pan and sprinkle with icing sugar.
Vanilla sauce
- Mix 5 tablespoons of the milk with the custard powder. Heat the remaining milk in a saucepan.
- When the milk begins to boil, stir in the custard powder mixture and bring to a boil again.
- Remove from the hob and gradually stir in the chocolate with a whisk.
