ASPARAGUS LINGUINE WITH BACON, PESTO & CAPERS
Asparagus is finally in season again! Sabrina from Sabrina kocht (Sabrina Cooks) shares her method for preparing asparagus.
And this is how it's done.
INGREDIENTS
- Linguine
- 1 bunch of white asparagus
- 150 g bacon cubes
- 1 small glass of capers
- 1 glass of wild garlic or lovage pesto
- Salt and pepper
- A little water
- Parmesan, grated cheese
- 2-3 tablespoons whipped cream
METHOD
- Cook the linguine (or spaghetti) al dente.
- Peel the asparagus and cut it into small pieces.
- Fry the asparagus in a pan and cover with water.
- Let it cook a little until tender, but still has a little bite.
- Then add the bacon cubes to fry them.
- Make a sauce out of it and enrich it by adding some whipped cream.
- Add some more water when possible.
- Finally add the linguine and stir in a little pesto and some capers.
- Taste and season the noodles.
- If you like, you can sprinkle some Parmesan or grated cheese on top.
